Kinome miso

Kinome miso ingredients
3g Japanese pepper treefs new leaves
20g Japanese spinach leaves
150g white miso bean paste
2 tablespoons sugar
1 tablespoon Japanese kelp soup
1 tablespoon mirin

How to cook

1 Boil the Japanese spinach leaves in a pan for 1 minute.
Drain in a bowl and rinse.
2 Finely chop.
3 Grind the Japanese pepper treefs new leaves in a mortar until they are like paste.
4 Add the chopped Japanese spinach leaves and grind them with the Japanese pepper treefs paste.
5 Add the sugar, white soy bean paste, Japanese kelp soup and mirin.
6 Mix them.

Kinome miso is a beautiful light green!
